Abstract

Natural resources are depleted, and human health is deteriorating. The world needs an urgent change in the eating behavior of its inhabitants. The most advisable alternative is to adopt sustainable eating behavior. However, to better understand sustainable consumption and promote its behavior, it is essential to consider socioeconomic, cultural, and political aspects and accessibility of sustainable foods. This article provides a conceptualization of consumer behavior. It addresses the problems related to sustainability in Mexico, the commitment that the consumer may or may not have with it, and the challenges that may be found to promote this behavior. This study presents a perspective to open debate in the search for universal objectives to promote healthy, sustainable, and pro-environmental consumption.
